Ingredients:
sweet white turnip greens (daikon radish leaves, spinach, kale and tatsoi work too)
garlic
onion (red or white ideal)
lemon juice
mayo
grainy mustard
maple syrup or honey
(preserved lemon, if you have it!)
eggs, optional
Directions:
Chop onions, mince garlic & sautee in oil of choice until soft
Wash and coarsely chop turnip greens
Add a bit of water to pan, add greens, stir & cover. Cook ~5 mins or until soft but not mushy. Stir occasionally to distribute heat.
Poach eggs, if desired.
Meanwhile, make mustard sauce by mixing mayo, grainy mustard, chopped preserved lemon or lemon juice, wee bit of maple syrup or honey to taste.
When greens are sauteed, add a good splash of lemon juice and stir through.
Place poached eggs on plated greens if desired and top all with mustard sauce.
Optional: this is also delicious with the roasted turnip roots (and radishes!), glazed with a little honey, on the side.
